Det vankas saffranstider och varje år hittills har jag bara väntat på den här årstiden för att kunna köpa mig en saftig saffranslängd i mataffären men i år gav jag mig på att baka den själv och riktigt riktigt gott och saftigt blev det! Det här receptet ger två STORA saffranslängder fyllda med mandelmassa, vanilj och kardemumma.

Every year, I’m waiting for november and december for the grocery shops to start selling these saffron braids as they are called with almond paste. This year I just had to try making them myself – and this is the delicious result! My recipe will give you two BIG saffron braids filled with almond paste, vanilla and cardamom.
Ingredients (dough):
200 g room tempered butter
1 cup whole milk
1 cup whipping cream
50 g yeast
2 sachets of saffron of 0,5 g each
0,5 tsp salt
0,75 cup granulated sugar
5 cups all purpose flour
1 cup whole milk
1 cup whipping cream

Ingredients (filling):
100 g room tempered butter
200 g grated almond paste
0,5 tsp non-alcoholic vanilla aroma
1 cup whipping cream
1 tsp cardamom
200 g grated almond paste
0,5 tsp non-alcoholic vanilla aroma
1 cup whipping cream
1 tsp cardamom
1. Heat the milk and whipping cream until lukewarm, about 37 degrees celsius.
2. In a bowl, crumble the yeast and pour over the milk and cream mixture. Stir until the yeast is completely dissolved.
3. Add the room tempered butter, saffron, sugar and salt.
4. Stir in a little flour at a time until you get a smooth dough.
5. Let rise covered for about 2 hours.
6. Preheat the oven to 175 degrees celsius.
7. Roll out the dough on a floured surface to two plates with dimensions of approximately 30×40 cm.
8. Mix together all the ingredients for the filling and spread the it on the two plates. Roll them up one by one and put on a baking sheet with parchment paper.
9. Cut your lengths so they resemble braids and brush them with a beaten egg. Decorate with pearl sugar or almond.
10. Bake the braids in the middle of the oven for 30-40 minutes. Reduce heat to 150 degrees during the last 10 minutes.
