Ingredients (daimfluff – frosting):
200 g of daim, minced
3 dl whipping cream
Do this:
1. Gently heat the cream and Daim in a saucepan and mix all the time. It should not boil!
2. When all Daim is melted into the cream, pour over the frosting into a bowl and let stand in refrigerator for at least 4 hours but preferably overnight.
3. Whisk the frosting to pipeable consistency and pipe on your cupcakes when they have cooled.
Ingredients (12 muffins):
5 dl flour
1.75 dl cocoa
1 teaspoon baking powder
0.5 teaspoons baking soda
1 pinch of salt
2.5 dl granulated sugar
100g melted butter
2.5 dl buttermilk
2 large eggs
Do this:
1. Preheat oven to 200 degrees celsius and spread 12 muffin cases in a muffin pan.
2. Mix the flour, cocoa, baking powder, baking soda and salt in a bowl. Set aside.
3. Mix the granulated sugar, melted butter, buttermilk and eggs in a large bowl. Sift the dry ingredients and whisk until smooth.
4. Spread the batter into the muffin cases and bake in middle of oven for about 20 minutes.
For additional scrumptious cupcakes, you can also decorate with chocolate icing and chopped Daim.
