These little delicious pieces are not only nice to eat, they are also free from refined sugar and gluten! This recipe serves about 10 coconut tops.
Ingredients:
75 g butter
2 large eggs
2 tablespoons honey
200 g coconut flakes (equivalent to about 5 dl)
grated zest of 1 lemon
100 g chocolate with 80% cocoa content
50 g butter
Do this:
1. Preheat the oven to 175 degrees.
2. Melt the butter.
3. Beat the eggs lightly.
4. Add the honey, coconut flakes, lemon zest and butter to the eggs. Stir until smooth.
5. Let the batter swell for about 10 minutes.
6. Click the batter to about 10 equal coconut tops on a plate with baking paper.
7. Bake in the middle of the oven for about 10 minutes or until the coconut tops get a nice golden color.
8. Let the coconut tops cool down completely before glazing with chocolate
9. Melt butter and chocolate in a stainless steel bowl or glass bowl over a hot water bath. Allow to cool and thicken slightly.
10. Dip the coconut tops in the chocolate. Now they are ready to be eaten!
