However, I was quickly disappointed in the recipes available on mousses and pie fillings based on agar agar, so I had to test my way to the recipe that I am completely satisfied with.
Ingredients (Strawberry Shortcake):
225g frozen strawberries
1 dl water
2 teaspoons lemon juice
0.75 teaspoon agar agar powder
1.5 tablespoons powdered sugar
3 dl whipping cream
Do this:
1. Boil frozen strawberries, water and lemon juice in a saucepan until the strawberries are completely dissolved.
2. Strain the strawberry puré so that you lose any threads, cores and pieces that may be left.
3. Beat in the agar agar powder and boil again. Allow to cook, stirring, until it reaches 45 degrees celsius (or cook for 3-5 minutes).
4. Pour everything into a bowl and let cool in room temperature! But do not let it harden completely before mixing it with the whipping cream.
5. Whisk the cream, then add the strawberry puré. Then add the powdered sugar. Beat until you get a smooth, nice and fluffy mousse.
